Loetta and Ivan Fowler of rural Emporia have an egg empire. A Muscovy duck egg empire, to be exact.
“We started raising the ducks after we retired in ‘08,” Loetta said. “We have 12 Muscovy ducks, six pairs. The ducks are good for meat and eggs and they stay. They might fly away to the neighbor’s pasture but they come back at night.”
I recently discovered the joys of duck eggs after visiting the Saturday morning Farmers Market (8 a.m., usually; 7 a.m. this week, Seventh Avenue and Merchant Street). What fun!
Ms. Loetta started selling eggs at the Emporia Farmers Market about four years ago.
“The yolks are bigger than the whites,” she said. “Some people prefer them for baking, and they’re really good for homemade ice cream. I’ve got one customer who loves to just fry them.”
